Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Trim the leaves from the head of cauliflower and break it into small florets. Use a food processor to pulse the florets until they reach a rice-like consistency.
Spread the cauliflower rice on a clean kitchen towel and squeeze out as much excess moisture as possible.
Dice the celery and onion finely.
In a large skillet over medium heat, melt the butter. Add the diced celery and onion and sauté until soft, about 5 minutes. Remove from heat and let it cool slightly.
