Start by cleaning the cremini mushrooms with a damp towel to remove any dirt. Dice the mushrooms finely.
Finely chop half a medium onion and mince the garlic cloves.
In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 4 minutes.
Add the minced garlic to the skillet and sauté for an additional minute.
Increase the heat slightly and add the diced mushrooms. Sauté until the mushrooms are browned and any liquid they have released is evaporated, about 6-8 minutes.
Transfer the mushroom mixture to a large mixing bowl and let it cool slightly.
In the mixing bowl with the mushroom mixture, add almond flour, a beaten large egg, grated Parmesan cheese, chopped fresh parsley, salt, black pepper, and cayenne pepper.
Mix all the ingredients until well combined. If the mixture is too wet, add a little more almond flour if necessary.
Form the mixture into 4 evenly-sized patties.
In the same skillet used earlier, heat the remaining tablespoon of olive oil and butter over medium heat.
Fry the patties in the skillet for about 3-4 minutes on each side, or until they are golden brown and cooked through.
Once cooked, remove the patties from the skillet and let them drain on a paper towel-lined plate.
Serve the patties warm. They can be enjoyed on their own, with a salad, or as a sandwich in a low-carb bun.
