Cut the paneer into cubes and set aside. Slice the baby corn into small rounds.
Finely chop the onion, tomatoes, and green chili.
Heat ghee in a pan over medium heat. Add the chopped onion and sauté until translucent.
Add ginger garlic paste and the green chili. Cook until the raw smell disappears, about 2 minutes.
Add chopped tomatoes and cook until they become soft and the oil starts separating from the mixture.
Stir in the coriander powder, cumin powder, and turmeric powder. Mix well and cook for another 2 minutes.
Add sliced baby corn, mix well, and sauté for 3-4 minutes.
Add 100 ml of water and salt to taste. Cover the pan and let it simmer for 5 minutes, allowing the baby corn to cook.
Add the paneer cubes and garam masala, gently stirring to coat the paneer with the masala.
Pour in the heavy cream and allow the gravy to simmer for an additional 3-4 minutes, adjusting seasoning if necessary.
Garnish with fresh coriander leaves before serving.
Serve hot with a low-carb bread of choice or cauliflower rice.
