Delight in a low-carb twist on a traditional Bavarian favorite with this Low Carb Kartoffelsalat (German Potato Salad). Perfect for keto enthusiasts or anyone watching their carb intake, this recipe swaps the usual potatoes for tender turnips and cauliflower, creating a lighter yet equally satisfying dish. Crispy bacon, sautéed onions, and a tangy dressing made with apple cider vinegar and Dijon mustard infuse the salad with bold and savory flavors. This warm salad, garnished with fresh chives, is the ultimate healthy side dish for barbecues, holiday feasts, or weeknight dinners. Ready in just 45 minutes, it's the perfect marriage of traditional German flavors and modern dietary needs.
Peel and cube the turnips into 1/2-inch pieces. Cut the cauliflower into small florets.
Fill a large pot with water and bring it to a boil. Add the cubed turnips and boil for 10 minutes. After 5 minutes, add the cauliflower florets. Boil until both are tender but not mushy.
While the turnips and cauliflower are cooking, chop the bacon into 1/2-inch pieces. Cook the bacon in a skillet over medium heat until crisp. Remove the bacon from the skillet and set aside on a paper towel-lined plate.
Keep about 2 tablespoons of the bacon drippings in the skillet and add the finely chopped onion. Sauté for about 3-4 minutes until the onion is soft and translucent.
In a small bowl, whisk together apple cider vinegar, olive oil, Dijon mustard, and chicken broth. Add salt and black pepper to taste.
Drain the cooked turnips and cauliflower thoroughly. Place them in a large mixing bowl.
Pour the dressing over the warm turnips and cauliflower. Add the sautéed onions and about 3/4 of the bacon pieces. Toss everything gently to coat.
Let the salad sit for a few minutes to allow the flavors to meld. Taste and adjust seasoning if necessary.
Serve the salad warm, garnishing with the remaining bacon pieces and freshly chopped chives.
