Preheat the oven to 350°F (180°C) and grease a baking pan or cake tin with a little olive oil.
Grate the zucchini and carrot. Squeeze out excess moisture from the grated zucchini using a clean kitchen towel.
Finely chop the ginger and green chili.
In a large mixing bowl, combine the almond flour and Greek yogurt to form a thick batter.
Add the grated zucchini, carrot, peas, and enoki mushrooms to the batter. Stir in the ginger, green chili, turmeric powder, red chili powder, and salt.
Sprinkle the baking soda over the mixture and gently fold it in.
Heat 2 tablespoons of olive oil in a small pan over medium heat. Add the mustard seeds and cumin seeds, and let them crackle. Turn off the heat and add the curry leaves.
