Begin by preparing the cauliflower rice. Add the cauliflower rice to a non-stick pan and cook over medium heat for 5-7 minutes, stirring frequently, until softened and most of the moisture is evaporated.
Remove the cauliflower rice from heat and mix in the rice vinegar and salt. Set aside to cool to room temperature.
Peel and slice the cucumber into thin, long strips. Halve the avocado, remove the pit, and slice into thin wedges. Set both aside.
In a small bowl, mix the mayonnaise and sriracha sauce until well combined. This will be used as a spicy mayo topping.
