📝 Instructions

11 steps
1

Begin by preparing the cauliflower rice. Add the cauliflower rice to a non-stick pan and cook over medium heat for 5-7 minutes, stirring frequently, until softened and most of the moisture is evaporated.

2

Remove the cauliflower rice from heat and mix in the rice vinegar and salt. Set aside to cool to room temperature.

3

Peel and slice the cucumber into thin, long strips. Halve the avocado, remove the pit, and slice into thin wedges. Set both aside.

4

In a small bowl, mix the mayonnaise and sriracha sauce until well combined. This will be used as a spicy mayo topping.

5

Lay a sheet of nori on a bamboo sushi mat, shiny side down. Evenly spread a thin layer of the cooled cauliflower rice over the nori, leaving about 2 cm clear on the top edge.

6

Place two imitation crab sticks horizontally across the center of the rice, adding a few slices of cucumber alongside the crab.

7

Carefully lift the bottom edge of the sushi mat and roll it over the filling, pressing gently to shape the roll. Continue rolling until you reach the end of the nori sheet, using a little water on the exposed edge to seal the roll.

8

With a sharp knife, slice the roll into 8 equal pieces. Repeat the process with the remaining nori sheets and ingredients.

9

Lay slices of avocado on top of each roll piece, slightly overlapping them like dragon scales.

10

Drizzle the spicy mayo on each slice of the roll and sprinkle with toasted sesame seeds.

11

Finish with eel sauce, if using, and serve immediately.
