Rinse the lentils thoroughly and cook them in a medium saucepan of boiling water for about 15-20 minutes or until tender. Drain and set aside to cool.
In a skillet over medium heat, sauté the diced onion and minced garlic until softened and translucent, about 3-4 minutes. Remove from heat and let it cool.
