Preheat your oven to 180Β°C (350Β°F) and line a 9x13-inch (23x33 cm) baking pan with parchment paper, leaving some overhang to easily lift the bars out later.
In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2 minutes.
Gradually add the 275 grams of all-purpose flour and the salt to the butter mixture. Mix until a crumbly dough forms.
Press the dough evenly into the prepared baking pan, making sure it is tightly packed and level. Bake the crust in the preheated oven for 18-20 minutes, or until golden brown. Remove from the oven and let it cool slightly while preparing the filling.
In a medium bowl, whisk together the eggs, fresh lemon juice, lemon zest, powdered sugar, and the remaining 30 grams of flour until smooth and well-combined.
Pour the lemon filling mixture over the partially baked crust, spreading it evenly.
Return the pan to the oven and bake for another 15-18 minutes, or until the filling is set and just slightly jiggly in the center.
Remove the pan from the oven and allow it to cool completely at room temperature, then transfer it to the fridge to chill for 1 hour.
Once chilled, use the parchment paper overhang to lift the bars from the pan. Cut into triangles by slicing into squares first, then halving each square diagonally.
Dust the tops of the triangles with additional powdered sugar, if desired, and serve. Store leftovers in an airtight container in the fridge for up to 5 days.
