Itβs quick to prepare in under 40 minutes and makes a wholesome, refreshing option for lunch or dinner. Ideal for fans of Greek cuisine and citrus-forward recipes, Lemon Rice Soup is sure to become a family favorite for its balance of nourishing warmth and vibrant zing.
Pour the chicken broth and water into a large pot and bring it to a boil over medium-high heat.
Once boiling, add the rice, reduce the heat to a simmer, and cover the pot. Let it cook for about 20 minutes or until the rice is tender.
While the rice is cooking, crack the eggs into a mixing bowl. Beat them lightly.
Juice the two lemons and set the juice aside. You should have about 1/2 cup of lemon juice.
Once the rice is done, take a ladle of the hot broth from the pot and slowly whisk it into the beaten eggs to temper them. This prevents the eggs from curdling when added to the soup.
Slowly pour the egg mixture back into the pot while stirring continuously to make the soup creamy.
Add the lemon juice to the soup and season with salt and black pepper. Stir well to combine all the flavors.
Let the soup heat through for an additional 5 minutes on low heat, but do not let it come to a boil.
Remove the soup from heat and stir in the olive oil for added richness.
Finely chop the fresh parsley and sprinkle it over the soup just before serving for a fresh, herbal flavor.
