Rinse and peel the potatoes, then cut them into bite-sized cubes of approximately 2 cm.
Place the potato cubes in a large pot of salted water and bring to a boil over medium-high heat. Cook for 15-20 minutes, or until the potatoes are fork-tender but not falling apart.
While the potatoes are cooking, prepare the dressing. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper until well combined. Set the dressing aside.
