Warm, nourishing, and bursting with bright Mediterranean flavors, Lebanese Adas Bis Silq (Lentil Swiss Chard Soup) is a hearty yet healthy bowl of comfort. This traditional Lebanese recipe features tender brown or green lentils simmered with earthy Swiss chard, creamy potatoes, and aromatic spices like ground cumin for a deeply satisfying flavor profile. A splash of fresh lemon juice adds a zesty kick, perfectly complementing the richness of the olive oil-sautéed onions and garlic. Quick to prepare in under an hour, this vegan and gluten-free soup makes for a wholesome weeknight meal or a cozy appetizer. Serve it hot with warm pita bread or crusty bread on the side for a delightful taste of Lebanon in every spoonful!
Rinse the lentils thoroughly under cold running water and set aside.
In a large pot, add the rinsed lentils and 6 cups of water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 20 minutes, partially covered.
While the lentils are cooking, wash the Swiss chard thoroughly. Separate the stems and leaves. Chop the stems into small pieces and roughly chop the leaves. Set aside.
In a skillet, heat the olive oil over medium heat. Sauté the diced onion until soft and translucent, about 5 minutes.
Add the minced garlic to the onion and sauté for another 1-2 minutes, until fragrant. Stir in the cumin and cook for 30 seconds.
Add the sautéed onion and garlic mixture to the pot with the simmering lentils.
Stir in the diced potatoes and Swiss chard stems. Cook for another 15 minutes, until the potatoes are tender.
Add the chopped Swiss chard leaves to the pot and cook for an additional 5 minutes, until wilted.
Stir in the lemon juice, salt, and black pepper. Adjust the seasoning to taste.
Serve hot with a side of warm pita bread or crusty bread for a complete meal. Garnish with additional lemon wedges, if desired.
