Peel and dice the potatoes. Place them in a pot of salted water and boil until tender, about 15-20 minutes.
While the potatoes are boiling, finely dice the onions and sauté them in 2 tablespoons of butter over medium heat until soft and golden, about 5-7 minutes. Set aside.
Drain the cooked potatoes and mash them with 4 tablespoons of butter, sour cream, milk, salt, and pepper until smooth. Stir in 1 1/2 cups of shredded cheddar cheese. Set the mixture aside.
