In a large mixing bowl, combine the ground lamb, ground cumin, ground coriander, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix until just combined, being careful not to overwork the meat.
Divide the lamb mixture into four equal portions and shape each one into a patty about 1/2 inch thick. Make a small indentation in the center of each patty to help them cook evenly. Set aside.
Finely mince the garlic cloves and slice the red onion into thin rings. Set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant, but not browned.
Add the baby spinach to the skillet with a pinch of salt and stir until wilted, about 2-3 minutes. Remove the spinach from the skillet and set aside.
In the same skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the lamb patties and cook for 4-5 minutes per side for medium-rare, or until your desired doneness. Remove from heat and let rest for 5 minutes.
While the lamb patties rest, toast the hamburger buns in a toaster or on a dry skillet until lightly golden.
To assemble, spread 1 tablespoon of mayonnaise on the bottom half of each bun. Top with a lamb patty, a generous portion of garlic spinach, and a few slices of red onion. Sprinkle with fresh parsley for garnish, then place the top bun over the filling.
Serve immediately with your favorite side dishes or enjoy on its own!
