In a small bowl, dissolve the yeast in warm milk (not hot, about 38°C/100°F) and set aside for 5 minutes until it becomes frothy.

In a large mixing bowl, combine the flour, sugar, ground cardamom, and salt.

Divide the dough into 2 portions for easier handling. Roll out one portion on a lightly floured surface into a rectangle, about 5 mm (1/4 inch) thick.

Spread a thin, even layer of the date paste onto the rolled-out dough. Roll the dough tightly into a log, starting from one of the long edges.

Using a sharp knife, cut the log into 2 cm (3/4 inch) slices, and place them flat onto the prepared baking sheet.

In a small bowl, whisk together the egg yolk and milk to create the egg wash. Brush the tops of the cookies with this mixture, and sprinkle sesame seeds on top if desired.
