📝 Instructions

11 steps
1

Rinse the basmati rice and moong dal under cold water for a couple of times until the water runs clear. Drain and set aside.

2

In a large pot, heat the ghee or oil over medium heat. Add the cumin seeds and bay leaf and sauté until the cumin seeds crackle.

3

Add the sliced onion and sauté until golden brown.

4

Stir in the ginger and garlic paste and cook for another minute until the raw smell disappears.

5

Add the turmeric powder, coriander powder, and the slit green chili. Stir for a minute to roast the spices.

6

Mix in the chopped vegetables and tomatoes, and cook for about 4 minutes, until they begin to soften.

7

Add the rinsed rice and moong dal to the pot, and stir everything together well.

8

Pour in the water and add salt. Stir, then bring the mixture to a boil.

9

Reduce the heat to low, cover the pot with a lid, and let it simmer for about 25 minutes, or until the rice and lentils are fully cooked and the mixture has a creamy consistency.

10

Turn off the heat, then sprinkle garam masala and chopped cilantro on top. Gently fluff the khichuri with a fork.

11

Allow it to rest covered for a few minutes before serving warm.
