In a small bowl, combine the yeast, sugar, and warm milk. Stir gently, and let it sit for about 10 minutes until frothy.
In a large mixing bowl, mix the flour and salt. Add the yeast mixture, melted butter, and one of the eggs. Mix until a dough forms.
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
Lightly oil a large bowl with olive oil, place the dough inside, cover with a clean kitchen towel, and let it rise in a warm spot for about 1-1.5 hours or until doubled in size.
