Prepare the cauliflower topping: Steam or boil the cauliflower florets until fork-tender, about 8-10 minutes. Drain well and set aside.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sautΓ© for 1 minute until fragrant.
Add the diced onion, celery, and carrot to the skillet. Cook for 5-7 minutes, stirring occasionally, until softened.
