Thinly slice the beef into strips, cutting against the grain for maximum tenderness. Place in a bowl.
Add 2 tablespoons of soy sauce and 1 tablespoon of sesame oil to the beef. Toss to coat and let it marinate while you prepare the other ingredients.
Wash and core the green bell peppers. Slice them into thin strips and set aside.
Peel and finely mince the garlic and ginger. Keep them in a small bowl together.
In a small separate bowl, mix the remaining tablespoon of soy sauce with 2 tablespoons of water. If using xanthan gum, add it to the mixture and whisk well until smooth. Set aside.
Heat a large non-stick skillet or wok over medium-high heat. Add 2 tablespoons of olive oil.
Once the oil is hot, add the marinated beef strips in a single layer. Sear for about 2 minutes on one side, then stir-fry for another 2 minutes until almost fully cooked. Remove the beef from the skillet and set it aside on a plate.
In the same skillet, add the sliced green peppers. Stir-fry for 2-3 minutes until they are slightly tender but still crisp.
Push the peppers to the sides of the skillet and add the garlic and ginger to the center. SautΓ© for about 30 seconds until fragrant.
Return the beef to the skillet and stir everything together. Sprinkle with black pepper and optional red chili flakes.
Pour the prepared sauce over the beef and peppers. Stir well to coat everything evenly. Cook for another minute, allowing the sauce to thicken slightly.
Remove from heat and transfer to a serving dish. Garnish with chopped scallions before serving.
Serve hot and enjoy as-is, or pair it with cauliflower rice for a complete keto meal.
