The tortillas are perfectly crisped in butter, adding a decadent touch, while smoked paprika and garlic powder lend a savory depth to every bite. Ready in just 30 minutes, these quesadillas are ideal for busy weeknights or meal-prep indulgence. Serve them hot with zesty lime wedges on the side for an irresistible combination that's both satisfying and keto-friendly!
In a mixing bowl, combine the shrimp with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss to thoroughly coat the shrimp.
Heat a non-stick skillet over medium-high heat.
Cook the shrimp in the skillet for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp and set aside.
Wipe the skillet clean and reduce the heat to medium. Add butter to the skillet and let it melt.
Place one keto-friendly tortilla in the skillet and evenly sprinkle half of the cheddar and mozzarella cheese on one half of the tortilla.
Arrange half of the cooked shrimp on top of the cheese. Sprinkle 1 tablespoon of chopped cilantro over the shrimp.
Fold the tortilla in half to enclose the filling.
Cook for 2-3 minutes or until the bottom is golden brown and the cheese begins to melt. Carefully flip the quesadilla and cook for another 2-3 minutes.
Remove the quesadilla from the skillet and repeat the process with the remaining ingredients to make the second quesadilla.
Cut each quesadilla into wedges and serve hot with lime wedges on the side.
