📝 Instructions

10 steps
1

Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

2

Season both sides of the chicken breasts with salt and pepper.

3

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

4

Add the chicken breasts to the skillet and cook for 5 to 6 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

5

Reduce the heat to medium and add 1 tablespoon of butter to the skillet along with the remaining tablespoon of olive oil.

6

Add the minced garlic and cook for about 1 minute until fragrant.

7

Stir in the lemon juice and chicken broth, scraping up any browned bits from the bottom of the skillet. Allow the mixture to simmer for 3 to 4 minutes.

8

Return the chicken breasts to the skillet and sprinkle fresh thyme leaves over them. Simmer for another 2 minutes.

9

Melt the remaining tablespoon of butter into the sauce and add the baby spinach, cooking until it wilts slightly.

10

Serve the chicken hot, drizzled with the sauce and spinach, for a delightful keto-friendly meal.
