Cut the paneer into bite-sized cubes.
Slice the red and green bell peppers and zucchini into thin strips.
Mince the garlic cloves and grate the ginger.
Heat 1 tablespoon of olive oil in a large frying pan over medium heat.
Add the paneer cubes and sauté until golden brown on all sides, about 5-7 minutes. Remove the paneer from the pan and set aside.
