Preheat the oven to 400°F (200°C).
Chop the cauliflower into florets. Toss with 1 tablespoon olive oil, salt, and pepper.
Spread the cauliflower on a baking sheet. Roast in the oven for about 15-20 minutes, or until tender and lightly browned.
