Begin by slicing the chicken breast into thin strips, approximately 1/2 inch wide.
In a small bowl, combine the olive oil, Italian seasoning, salt, and black pepper. Toss the chicken strips in this mixture until well coated.
Heat a non-stick skillet over medium-high heat. Add the chicken strips and cook for about 6-7 minutes, stirring occasionally, until they are fully cooked and golden brown. Remove from heat and set aside.
