Begin by preparing the cauliflower. Remove the leaves and cut the cauliflower into large florets. Rinse them under cold water to remove any dirt.
Using a food processor or a box grater, grate the cauliflower florets to resemble grains of rice. Set aside.
Finely chop the onion and slice the green chili thinly.
Heat a pan over medium flame and add the ghee.
Once the ghee is hot, add the mustard seeds and let them splutter.
Add the curry leaves and sliced green chili to the pan. Sauté for around 30 seconds until fragrant.
