Preheat your oven to 325°F (163°C).
Remove the neck and giblets from the turkey cavity and pat the turkey dry with paper towels.
In a small saucepan over low heat, melt the butter.
Stir in sugar-free honey substitute, soy sauce, apple cider vinegar, garlic powder, onion powder, dried thyme, dried rosemary, salt, and black pepper until well combined.
Place the turkey in a roasting pan, breast side up. Tuck the wings under the turkey.
Brush the turkey with a portion of the glaze mixture, covering the surface evenly.
Insert the lemon slices and fresh herb sprigs into the turkey cavity.
Cover the turkey loosely with aluminum foil and place it in the oven.
Roast the turkey for approximately 2.5 to 3 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast. Baste the turkey every 30 minutes with the remaining glaze.
Remove the foil during the last 30 minutes of roasting to allow the skin to become golden brown.
Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving.
Carve the turkey and serve, garnishing with additional fresh herb sprigs if desired.
