Indulge in the decadently creamy delight of Keto Homemade Nutella—a luscious chocolate-hazelnut spread that's irresistibly rich, completely sugar-free, and keto-friendly! Made with wholesome ingredients like roasted raw hazelnuts, sugar-free dark chocolate, and a hint of vanilla, this guilt-free Nutella alternative packs all the flavor without the carbs. The velvety texture is achieved through blending the naturally buttery hazelnuts to perfection, while cocoa powder and a touch of erythritol add just the right amount of sweetness. Perfect for spreading on keto pancakes, drizzling over low-carb desserts, or enjoying straight from the jar, this homemade Nutella is a game-changer in the world of keto snacks. Ready in just 30 minutes, it’s easy to whip up and can be stored for weeks, making it a convenient and delicious addition to your low-carb lifestyle.
Preheat your oven to 180°C (356°F). Spread the raw hazelnuts on a baking sheet in a single layer.
Roast the hazelnuts in the oven for 10 to 15 minutes, or until the skins are dark and starting to crack. Stir once halfway through to prevent burning.
Remove the hazelnuts from the oven and let them cool for a few minutes. Then, wrap them in a clean kitchen towel and rub vigorously to remove most of the skins. It’s okay if some skins remain.
Melt the sugar-free dark chocolate in a microwave-safe bowl or over a double boiler, stirring until smooth.
In a food processor, add the peeled hazelnuts and blend on high speed until they turn into a fine meal. Scrape down the sides as needed.
Continue processing until the hazelnuts begin to release their oil and form a smooth butter. This may take about 5 to 8 minutes.
Add the melted chocolate, cocoa powder, erythritol, vanilla extract, coconut oil, and salt to the food processor. Blend until well combined and smooth.
Taste and adjust sweetness if necessary, blending in more sweetener as desired.
Transfer the Nutella to a jar or airtight container and allow it to cool completely. It will thicken as it cools.
Store your keto Nutella at room temperature for up to 1 week or in the fridge for up to 1 month. Stir before using to re-incorporate oils.
