Season the venison stew meat with salt and black pepper.
In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.
Add the venison in batches to avoid overcrowding. Brown the meat on all sides, about 5 minutes per batch. Remove the browned meat and set aside.
