Start by preparing the beef liver. Rinse it under cold water and pat dry with paper towels. Slice the liver into bite-sized pieces.
In a large pot, heat ghee or coconut oil over medium-high heat. Once the oil is shimmering, add the sliced liver pieces. Sauté them for about 3 minutes until browned on all sides. Remove the liver from the pot and set aside.
Reduce the heat to medium and add the chopped onion to the same pot. Sauté for 4-5 minutes until the onion is translucent.
Mince the garlic cloves and add them to the pot. Cook for another minute until fragrant.
Stir in the salt, paprika, black pepper, and cumin. Add the bay leaf at this time as well.
Add the tomato paste to the pot, mixing it well with the spices and onion. Cook for another minute.
Pour in the beef broth and scrape the bottom of the pot to deglaze it. Bring the broth to a simmer.
Add the sautéed liver back into the pot along with the chopped celery, sliced zucchini, and diced red bell pepper. Stir everything to combine.
Cover the pot and let it simmer gently for about 25 minutes, until the vegetables are tender and the flavors are well combined.
Taste the stew and adjust seasoning if necessary.
Before serving, garnish with freshly chopped parsley for a burst of color and freshness.
Remove the bay leaf before serving and enjoy this nutritious and flavorful keto liver stew.
