Begin by prepping the cauliflower rice. In a medium-sized pan over medium heat, add the cauliflower rice and stir-fry for 5-7 minutes until tender. Remove from heat and stir in the rice vinegar. Let it cool to room temperature.

Peel and pit the avocado, then slice it into thin strips. Also, peel the cucumber, remove the seeds, and slice it into thin strips.

Take a nori sheet and place it shiny side down on a bamboo sushi mat. Spread half of the cauliflower rice mixture evenly over the nori, leaving about an inch of space on the top edge.

Layer half of the cream cheese, cucumber strips, and cooked shrimp along the bottom edge of the nori sheet.

Use the bamboo mat to carefully roll the nori sheet over the filling, pressing gently to ensure a tight roll. Brush a little water on the top edge of the nori to seal it.
