Begin by preparing the cauliflower rice. Remove the leaves and the tough core from the cauliflower head. Break it into smaller florets.
In a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process and make it mushy.
Heat a large non-stick pan over medium heat. Add the riced cauliflower and cook for 5-7 minutes, stirring occasionally, until it's tender but not mushy.
Remove the cauliflower rice from heat and let it cool slightly. Stir in the rice vinegar and mirin to season the rice, and mix well.
Prepare the filling ingredients. Julienne the cucumber into thin matchstick-sized pieces. Slice the avocado in half, remove the pit, peel, and slice thinly.
Slice the fresh salmon or tuna into thin strips that are roughly the same length as the nori sheets are wide, about 10 cm.
Lay a sushi nori sheet shiny side down on a clean surface or sushi mat. Spread about 2-3 tablespoons of the cauliflower rice onto the left side of the nori sheet, leaving a small border around the edges.
Arrange a combination of cucumber, avocado, and fresh fish strips over the cauliflower rice.
Carefully roll the nori sheet into a cone shape by folding from the bottom left corner and rolling upwards, tucking the fillings inside as you roll. Press gently to seal.
Serve the keto classic sushi hand rolls with soy sauce, a small dab of wasabi paste, and pickled ginger on the side for an authentic sushi experience.
