Preheat your oven to 300Β°F (150Β°C). Line a baking sheet with parchment paper.
Separate the eggs, placing the egg whites in a large mixing bowl and the yolks in another bowl.
Add the cream cheese and baking powder to the egg yolks and whisk until well combined and smooth. Set aside.
Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form, about 3-4 minutes.
Gently fold the egg yolk mixture into the egg whites using a spatula. Be careful not to deflate the egg whites.
Spoon the mixture into four even portions on the prepared baking sheet, shaping them into round bread-like shapes.
Bake in the preheated oven for 20 minutes, or until golden and firm to the touch.
While the cloud bread is baking, peel and pit the avocado, then mash it in a bowl with a fork. Slice the cherry tomatoes in half.
Once the cloud bread is done, remove it from the oven and let it cool slightly.
In a skillet over medium heat, melt the butter. Crack the remaining egg into the skillet and fry to your desired doneness. Season with a pinch of salt and pepper.
Spread the mashed avocado evenly over all cloud bread slices. Top two slices with the fried egg, and garnish with halved cherry tomatoes and a sprinkle of chopped chives and black pepper.
Serve immediately and enjoy your keto-friendly egg toast.
