Preheat your oven to 300Β°F (150Β°C) and line a baking sheet with parchment paper.
In a medium bowl, separate 2 of the eggs, placing the whites in one bowl and the yolks in another.
Add the cream cheese and baking powder to the egg yolks. Mix until you have a smooth, lump-free batter.
Whisk the egg whites with a pinch of salt until they form stiff peaks.
Gently fold the whipped egg whites into the yolk mixture, taking care not to deflate the whites too much.
Spoon the mixture onto the prepared baking sheet to form 4 equally sized rounds. These will be your cloud bread buns.
Bake in the preheated oven for 15-20 minutes, or until golden and set.
While the bread bakes, cook the bacon in a skillet over medium heat until crispy. Set aside on paper towels to drain excess grease.
In the same skillet, melt the butter over medium heat. Crack the remaining 2 eggs into the skillet, season with salt and pepper, and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
Slice the avocado in half, remove the pit, and slice the flesh into thin slices.
Once the cloud bread is baked, assemble the sandwiches by layering a slice of cheese, crispy bacon, avocado slices, and a fried egg between two pieces of the cloud bread.
Serve the sandwiches warm and enjoy a deliciously satisfying keto breakfast!
