Place the 6 large eggs in a medium-sized saucepan and cover them with water, ensuring the water level is about an inch above the eggs.
Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan with a lid, turn off the heat, and let the eggs sit in the hot water for 10 minutes.
While the eggs are cooking, finely chop 1 celery stalk, 2 green onions, and 1 tablespoon of fresh dill. Set aside.
After 10 minutes, immediately transfer the eggs to a bowl of ice water to cool for 5 minutes. This will stop the cooking process and make them easier to peel.
Peel the cooled eggs and chop them into small pieces.
In a large mixing bowl, combine the chopped eggs, 0.5 cup of mayonnaise, 1 tablespoon of dijon mustard, chopped celery, green onions, and dill, 1 teaspoon of lemon juice, 0.25 teaspoon of salt, and 0.25 teaspoon of black pepper.
Gently mix all the ingredients until well combined. Adjust seasoning to taste.
Serve the egg salad alone or on a bed of leafy greens for a keto-friendly meal.
