Wash the zucchinis thoroughly and peel them using a vegetable peeler.
Cut the peeled zucchinis into medium-sized cubes.
In a medium saucepan, combine the diced zucchini, water, and lemon juice over medium-high heat.
Bring the mixture to a boil, then lower the heat to medium-low. Cover and let it simmer for 20 minutes, stirring occasionally until the zucchini is very soft.
Remove the saucepan from heat. Use an immersion blender to puree the mixture until it reaches a smooth consistency. If you don't have an immersion blender, you can transfer the cooked mixture to a regular blender or food processor.
Once pureed, return the mixture to the saucepan if necessary, then stir in the erythritol sweetener, ground cinnamon, unsweetened apple extract, and salt.
Place the saucepan back on the stove over low heat for 5 more minutes, stirring constantly until the sweetener dissolves and the sauce is well-mixed.
Remove from heat, let it cool, and transfer it to a storage container.
Refrigerate for at least an hour or until chilled before serving.
