Indulge in the guilt-free decadence of Keto Alu Puri, a low-carb twist on the classic Indian favorite! Perfect for ketogenic diets, this recipe replaces traditional wheat flour with almond and coconut flours for light, crispy puris that are fried to golden perfection in ghee. Paired with a flavor-packed "alu" curry made from spiced cauliflower cubes instead of potatoes, this dish offers all the comforting tastes of the original without the carbs. Enhanced with aromatic spices like cumin, turmeric, and garam masala, and garnished with fresh cilantro, itβs both nutritious and bursting with authentic Indian flavors. Ideal for brunch or dinner, Keto Alu Puri brings a satisfying, healthy upgrade to your table without sacrificing the richness of tradition.
In a mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
Add beaten eggs and water to the dry ingredients and knead until you get a firm, non-sticky dough. Cover the dough and let it rest for about 10 minutes.
Divide the dough into small balls and roll each into a thin disc, about 4 inches in diameter.
Heat ghee in a pan over medium heat. Fry each disc until golden brown on both sides. Remove and drain on paper towels.
To make the potato curry, heat ghee in a pan. Add cumin seeds and let them splutter.
Add the grated ginger and saute for 30 seconds.
Add cauliflower cubes as a potato substitute, turmeric, red chili powder, coriander powder, garam masala, and salt. Cook for 5 minutes.
Add 1 cup of water and cover the pan. Let it simmer for 15-20 minutes until the cauliflower is tender and the spices have blended well.
Garnish with fresh cilantro and serve hot with the keto puris.
