Discover the rustic charm of Finland with this hearty Karjalanpaisti, a traditional Karelian stew that has warmed hearts for centuries. Made with a rich trio of pork shoulder, beef chuck, and lamb shoulder, this dish celebrates simple ingredients and slow-cooked perfection. Layers of tender meat and sweet onions are simmered in a savory broth seasoned with whole allspice, bay leaves, and a touch of black pepper, creating a deeply flavorful and aromatic meal. Perfect for a cozy dinner, this oven-baked classic requires just 20 minutes of prep before it transforms into a tender, melt-in-your-mouth stew over three hours of gentle cooking. Serve your Karjalanpaisti with buttery mashed potatoes and tangy pickled beets for an authentic Nordic feast that brings comfort with every bite.
Preheat the oven to 325°F (165°C).
Cut the pork, beef, and lamb into large cubes, roughly 2 inches each.
Peel the onions and cut them into thick slices.
In a large ovenproof pot, layer the meat cubes, alternating types, with onions. Start with some meat at the bottom.
Add 1.5 liters of water to the pot, ensuring the meat and onions are mostly submerged.
Add whole allspice berries, bay leaves, salt, and black pepper into the pot.
Cover the pot with a lid and place it in the preheated oven.
Allow the stew to cook for about 3 hours, or until the meat is very tender. Check occasionally to ensure there's enough liquid; add a bit more water if necessary.
Once cooked, remove the pot from the oven and discard the bay leaves.
Serve the Karjalanpaisti warm, traditionally with boiled or mashed potatoes and pickled beets or cucumbers.
