Separate the egg yolks from the whites, setting the whites aside for another use or discarding them.
In a large mixing bowl, whisk the egg yolks and granulated sugar until the mixture becomes thick and pale yellow.
In a medium saucepan over medium heat, combine the whole milk, heavy cream, vanilla extract, ground nutmeg, and ground cinnamon. Heat until the mixture is warm but not boiling, stirring often to prevent scorching.
