Preheat your oven to 375Β°F (190Β°C).
Peel the pumpkin or butternut squash, remove seeds, and cut into roughly 3-inch cubes.
In a large mixing bowl, toss the pumpkin cubes with vegetable oil, sugar, cinnamon, salt, and black pepper until evenly coated.
Place the seasoned pumpkin pieces in a large baking dish in a single layer, making sure they arenβt overcrowded.
Cover the baking dish tightly with aluminum foil and bake for 60 minutes.
