In a medium bowl, pour the 3 oz packet of Jell-O gelatin mix.
Add 1 cup of boiling water to the gelatin mix and stir continuously for 2 minutes, or until the mix is fully dissolved.
Add 1 cup of cold water to the dissolved gelatin, and stir to combine. If you would like to enhance the flavor, substitute 1/2 cup of the cold water with 1/2 cup of your favorite fruit juice.
Carefully pour the mixture into popsicle molds, filling each mold about 3/4 full to leave space for freezing expansion.
Insert popsicle sticks into the molds. If the sticks don’t stay upright, freeze the mixture for about 30 minutes first, then add the sticks.
Transfer the molds to the freezer and freeze for at least 4-6 hours, or until the pops are completely frozen.
To remove the pops from the molds, briefly run the outside of each mold under warm water to loosen them.
