Delightfully flaky and irresistibly sweet, these Jam-Filled Pastries are the perfect treat for breakfast, brunch, or an afternoon snack. Featuring a buttery homemade pastry dough, this recipe combines simplicity with charm as each pastry is generously filled with your favorite jam, delivering a burst of fruity flavor in every bite. Crafted with pantry staples like all-purpose flour, unsalted butter, and granulated sugar, these pastries are easy to prepare and bake to golden perfection in just 20 minutes. An egg wash gives them a gorgeous sheen, while a hint of salt balances the richness. Ideal for gatherings or indulgent moments, this recipe is your ticket to mastering the art of homemade pastries.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the flour, salt, and sugar.
Cut the cold butter into small cubes and add it to the flour mixture, using a pastry cutter or your fingers to work it into the flour until it resembles coarse crumbs.
Gradually add cold water, one tablespoon at a time, mixing gently with a fork until the dough starts to come together. Be careful not to overwork the dough.
Turn the dough onto a lightly floured surface and knead it gently just enough to bring it together into a smooth ball. Flatten it into a disk, wrap in plastic wrap, and refrigerate for 15 minutes.
On a floured surface, roll out the dough to about 1/8 inch thick. Cut out rounds using a 3-inch cookie cutter.
Place about a teaspoon of jam in the center of half of the rounds, leaving about a quarter-inch border around the edge.
Brush the edges with a bit of water, then top with the remaining rounds, pressing the edges firmly with a fork to seal.
In a small bowl, beat the egg with the milk to create an egg wash. Brush the tops of the pastries with the egg wash.
Cut a small slit on the top of each pastry to allow steam to escape during baking.
Place the pastries on the prepared baking sheet and bake for 18-20 minutes, or until golden brown.
Let them cool slightly on a wire rack before serving warm.
