Preheat your oven to 350Β°F (175Β°C).
In a medium saucepan, heat the milk over medium heat. Add the cinnamon stick and let it simmer until the milk is infused with the cinnamon flavor, about 5β7 minutes. Remove from heat and let it cool slightly.
In a mixing bowl, whisk together the eggs, sugar, and vanilla extract until well combined and frothy.
Slowly pour the warm (not hot) milk into the egg mixture in a thin stream, whisking constantly, to temper the eggs and avoid them from curdling. Discard the cinnamon stick.
Strain the mixture through a fine-mesh sieve to remove any lumps or egg solids.
Distribute the custard mixture evenly into 6 individual oven-safe ramekins.
