Preheat your oven to 375°F (190°C).

Slice the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle the insides with olive oil and set them upright in a baking dish.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.
