Ingredients

  • 4 cups broccoli florets
  • 3 cups fresh spinach
  • 2 medium zucchini
  • 8 ounces cream cheese (softened)
  • 1 cup sour cream
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cups shredded Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.75 cups breadcrumbs (preferably panko)
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lightly grease a 9x13-inch casserole dish with cooking spray or a bit of olive oil.

Step 3

Heat a large pot of water to a boil and blanch the broccoli florets for 2 minutes. Immediately transfer the broccoli into a bowl of ice water to halt cooking. Drain and set aside.

Step 4

Slice the zucchini into thin rounds and pat them dry with a paper towel to remove excess moisture.

Step 5

In a large mixing bowl, combine the softened cream cheese, sour cream, 1 cup of mozzarella cheese, Parmesan cheese, garlic powder, salt, and black pepper. Stir well until smooth and creamy.

Step 6

Fold in the spinach, blanched broccoli, and sliced zucchini until all the vegetables are coated evenly with the cheese mixture.

Step 7

Transfer the vegetable-cheese mixture into the prepared casserole dish and spread it out evenly.

Step 8

In a small bowl, mix together the breadcrumbs, olive oil, and lemon zest until the crumbs are evenly coated.

Step 9

Sprinkle the breadcrumb mixture evenly over the top of the casserole, followed by the remaining 0.5 cup of mozzarella cheese.

Step 10

Bake in the preheated oven for 25 minutes, or until the casserole is bubbling and the topping is golden brown and crispy.

Step 11

Let the casserole cool for 5 minutes before serving. Enjoy!
