In a large bowl, combine the warm water, milk, and honey. Stir to dissolve the honey.
Sprinkle the active dry yeast over the liquid mixture and let it sit for 5-10 minutes until it becomes frothy.
Add the whole wheat flour, all-purpose flour, and salt to the yeast mixture. Mix until a shaggy dough forms.
Add the softened butter and egg to the dough, then knead on a floured surface for about 8-10 minutes until the dough is smooth and elastic.
Lightly grease a large bowl with vegetable oil and place the dough inside. Cover with a clean damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour or until it doubles in size.
Punch down the dough and divide it into 8 equal portions. Shape each portion into a round ball and place them on a parchment-lined baking sheet, spaced evenly apart.
Cover the rolls with a clean towel and let them rise again for about 30 minutes until puffy.
Preheat your oven to 375°F (190°C). Optional: For a shiny finish, whisk the egg yolk with 1 tablespoon of water and brush the tops of the rolls with the egg wash.
