Infused with warm cinnamon and complemented by optional mix-ins like crunchy nuts or chewy raisins, theyβre a versatile breakfast option or on-the-go snack. With a quick 15-minute prep time and a golden finish in just under 20 minutes, these easy homemade muffins are perfect for busy mornings. Pair them with your favorite cup of coffee or tea, and enjoy a cozy treat thatβs as nourishing as it is delicious.
Preheat your oven to 400Β°F (200Β°C) and line a 12-cup muffin tin with paper liners or grease it lightly.
In a medium bowl, combine the rolled oats and milk. Let the mixture sit for 10 minutes to soften the oats.
In a large bowl, whisk together the all-purpose flour, baking powder, salt, and cinnamon.
In a separate bowl, beat the egg. Add the honey, vegetable oil, and vanilla extract, whisking until smooth.
Pour the wet ingredients (egg, honey, oil, and vanilla mixture) into the soaked oats and milk. Stir well to combine.
Gradually add the wet oat mixture to the dry ingredients, stirring gently until just combined. Do not overmix.
If using chopped nuts or raisins, fold them into the batter at this stage.
Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
Enjoy the muffins warm or at room temperature. Store leftovers in an airtight container for up to 3 days or freeze for later.
