📝 Instructions

8 steps
1

Preheat your oven to 150°C (300°F) and line a 12-cup muffin tin with paper cupcake liners.

2

In a medium saucepan, melt the unsalted butter, honey, and sugar together over low heat. Stir continuously until the mixture is fully melted and smooth.

3

Increase the heat slightly and bring the mixture to a gentle simmer. Allow it to simmer for about 2 minutes, stirring occasionally, until it thickens slightly. Remove from heat.

4

Place the gluten-free cornflakes in a large mixing bowl. Pour the honey-butter mixture over the cornflakes, and gently stir with a wooden spoon or silicone spatula until all the flakes are evenly coated.

5

Spoon the mixture into the prepared cupcake liners, dividing it evenly among the 12 cups and pressing down gently to compact each one slightly.

6

Place the muffin tin in the preheated oven and bake for 8-10 minutes, or until the honey joys turn golden and smell fragrant.

7

Remove from the oven and allow the honey joys to cool completely in the tin. They will firm up as they cool.

8

Once cooled, transfer them to an airtight container for storage or serve immediately. Enjoy!
