If using dried black beans, soak 1.5 cups of beans overnight in water, rinse well, then cook until tender. Skip this step if using canned beans.
Heat olive oil in a large pot or Dutch oven over medium heat.
Add diced onion and sautΓ© for 3-4 minutes until soft and translucent.
