πŸ“ Instructions

10 steps
1

Soak the wooden skewers in water for at least 20 minutes to prevent them from burning while cooking.

2

Cut the chicken breast into 1-inch cubes and set aside.

3

In a medium bowl, prepare the marinade by combining the low-sodium soy sauce, honey, grated fresh ginger, minced garlic, rice vinegar, and toasted sesame oil. Mix well.

4

Reserve 2 tablespoons of the marinade for basting later. Transfer the chicken cubes into the bowl with the remaining marinade and toss to coat evenly. Cover and refrigerate for 30 minutes to 1 hour for best flavor.

5

While the chicken marinates, make the teriyaki glaze. In a small saucepan, add the reserved 2 tablespoons of marinade. In a separate bowl, mix the cornstarch and water to form a slurry, then add this mixture to the saucepan.

6

Bring the saucepan to a simmer over medium heat, stirring continuously, until the sauce thickens. Remove from heat and set aside.

7

Preheat your grill or grill pan to medium-high heat. While it heats up, thread the marinated chicken pieces onto the soaked skewers, leaving a small gap between each piece for even cooking.

8

Place the chicken skewers on the grill and cook for 5-7 minutes on each side, basting occasionally with the prepared teriyaki glaze. The chicken should be fully cooked with an internal temperature of 75Β°C (165Β°F).

9

Once done, remove the skewers from the grill and sprinkle them with sesame seeds and sliced green onions for garnish.

10

Serve immediately with steamed vegetables, rice, or enjoy them on their own as a high-protein meal.
