Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Thaw the puff pastry sheets as per the package instructions.
Drain and flake the sardines in a bowl.
Finely chop the red onion and garlic cloves.
In a skillet over medium heat, sauté the red onion and garlic until they become translucent, about 3 minutes.
