To make the dough for the litti, mix whole wheat flour with salt and 1 tablespoon of mustard oil. Gradually add water to form a firm dough. Cover and let it rest for 15 minutes.
Prepare the stuffing by combining sattu, grated paneer, ajwain, black salt, pickle masala, grated ginger, green chilies, lemon juice, and 1 tablespoon of mustard oil. Mix well to form a crumbly mixture.
Divide the dough into equal portions. Flatten each ball, add a spoonful of sattu-paneer filling in the center, and seal well to form a smooth ball.
Roast the eggplant, tomatoes, and potatoes directly over an open flame until charred and cooked. Let them cool, peel off the charred skins, and mash them together.
For the chokha, heat the remaining mustard oil in a pan; add cumin seeds, then add chopped onions and sauté until golden brown.
Add mashed mixture to the pan. Mix in turmeric powder, red chili powder, and salt. Cook for 5-7 minutes, stirring occasionally. Finish with chopped coriander leaves and set aside.
Preheat the oven to 180°C (356°F). Place the stuffed littis on a baking tray and bake for 20-25 minutes until golden brown, flipping halfway through.
Alternatively, littis can also be cooked on a charcoal grill for an authentic flavor.
Once the littis are cooked, dunk them in melted ghee and serve them hot along with the prepared chokha.
